We love easy recipes that taste like you’ve spent hours in the kitchen! This recipe nails that, and the chances are high that you probably already have everything you need in the fridge and the pantry.

Ingredients

1 cup self-raising flour

2 tablespoons cocoa powder

½ cup caster sugar

½ cup milk

1 teaspoon vanilla essence

1 egg

60g melted butter

 

Topping Ingredients:

1 cup brown sugar

1 tablespoon cocoa powder

1 + ¾ boiling water

 

Method 

Pre-heat oven to 180°C.

Butter a casserole dish.

Sift your flour and cocoa into a mixing bowl, then add the caster sugar.

Mix the milk with vanilla, egg, and butter.

Make a well in the centre of the dry ingredients and slowly pour the milk mixture in. Beat well with a wooden spoon for about half a minute.

Spoon the mixture into the casserole dish.

Make the topping by crushing any lumps out of the sugar and sift the cocoa on top.

Scatter this on top on the mixture.

Pour the boiling water over the pudding as evenly as possible.

Bake for 45-50 minutes and serve with whipped cream or ice-cream.

The pudding should be firm when touched. When bubbles start forming around the edge of the pudding, you know the sauce is ready.
