No-churn Ice Cream

Spring has sprung! The mornings are starting earlier, and the sunsets are later, the flowers are blooming and there’s a certain summer feel in the air! And what makes you think of summer more than ice-cream!

We have an easy 3 ingredient ice-cream base where you can create almost any ice-cream you’ve been dreaming of. The best part? There’s no ice-cream maker required for this one!

There’s no need for a time-consuming recipe or waiting for the ice-cream truck to drive by when you can whip up a creamy and indulgent ice-cream base in no time with a bowl, a hand mixer, and 3 ingredients. Once you have the base, it’s all a matter of choosing your favourite ingredients to personalise your ice-cream. Think chocolate chips & mint leaves, bananas & biscuits crumbs, marshmallow & caramel sauce, or even rose essence & Turkish Delight cubes – the choices are endless.


2 cups heavy whipping cream

1 tin condensed milk

1 teaspoon vanilla


In a large bowl, using a hand or stand mixer, whip the cream until stiff peaks occur. Be careful not to overwhip! The cream will be done when you pull the beaters out and the cream stands to attention.

In another bowl, whisk the vanilla and condensed milk. Once whipped, gently fold in the whipped cream, slowly mixing the two together so it stays light.

Gently fold in your extras – dried strawberries, chocolate, caramel, etc.

Transfer the mixture into an insulated tub and freeze for 2-6 hours.

Once set, leave out of the freezer for a few minutes before serving and licking up!
